Since I’m on this health kick that started about a week ago, I’ve found some yummy homemade protein bars I thought I’d share. The first recipe is very chewy (almost like taffy but not as taffy-y) and delicious, the second recipe is more of a cake-y texture but also yummy especially when you are a chick like me who LOVES sweets.
Chewy Chocolate Protein & Peanut Butter Fudge Bars
¾ cup all natural peanut butter
¾ cup organic honey
1 tsp vanilla extract – (I was out of vanilla so I learned that I could substitute maple syrup instead, tsp for tsp, I used all natural maple syrup)
½ cup chocolate protein powder
1/3 cup chopped pecans
In a sauce pan over medium-high heat, combine honey, peanut butter and vanilla (maple syrup). Whisk mixture together until smooth and thin, about 5 minutes. Turn off heat and stir in the chocolate protein powder. Add in pecans and mix together well. Pour mixture into a non stick 8x8 inch pan. Cover and freeze until firm, about 30 minutes. Allow to slightly thaw at room temperature before cutting into 16 squares.
Store fudge squares in the freezer and that for 5 minutes before eating.
Chocolate Protein Bars
1 cup oat flour
4 egg whites
2 scoops chocolate protein powder
½ cup truvia
½ tsp baking soda
¼ tsp salt
8 oz sugar free apple sauce
3 tbsp baking cocoa
4 oz water
Preheat over to 350 degrees, mix dry ingredients (flour, protein powder, baking soda, salt, baking cocoa) together in a bowl. Mix wet ingredients (egg whites, truvia, applesauce, water) together in a medium sized bowl. Add wet ingredients to dry ingredients and mix together. Spray a cooking dish with non stick butter spray and add batter to dish. Bake for 20-30 minutes in oven.
